CHOP CHOP CHEF PROFILE: ALAN ARSENAULT – CHURCH STREET STEAKHOUSE

As we count down to the Chop Chop 'Feast'ival for Foodies (Nov. 1st to 7th) will be profiling chefs at each of the participating
restaurants. Today we chat with Alan from Church Street Steakhouse…

1. Where we you born & raised?

I was born in the old General Hospital in Saint John, NB and spent my childhood here as well. Later in life I moved to Maine for a period of time and then returned here in 1999 and have remained here since.

2. What got you interested in cooking?
My uncle Clifford Wadman gave me a job and taught me a lot about respect, and speed with quality…which taught me how to be a cook. Working with Jesse Vergen introduced me to many different foods and taught me how to trust my food.
3. What are your favourite ingredients to work with?
Vinegars, Salt, and BEEF, BEEF, BEEF…
4. Have you ever served anyone famous?

Nazereth, Wayne Newton, ZZtop, StyXX, Collective Soul, Prism, Lee Aaron, Big People, LMFAO

5. Can you give us a sneak peek for your menu plan for Chop Chop?

I am thinking Ribs or a AA Baseball, but I am still playing and perfecting the recipe. Definately worth coming in to try!
